An everyday format, designed with full intent
A mess hall runs on a rhythm most restaurants never see — fast turnover, communal seating, and a kitchen that has to keep pace through every meal service. Our brief for Mannan Mess wasn't to reinvent that format, but to design it properly: a single line of service down the centre, with no crossing paths between the kitchen, the servers and the seated guests.
The approach
We planned the floor around service flow first — where food enters the room, where it's cleared, and how quickly a table turns over at peak hours — before a single material or finish was chosen. The result is a space that feels considered without feeling precious, built for volume without feeling institutional.
Scope
Terra led design and project management on Mannan Mess, working alongside the client's own execution team through to opening.
